In the wine cellar district of Ollauri, three old buildings and a spectacular plot of underground caves hold Bodegas Ollauri - Conde de los Andes. Since 2014 this winery assumes the legacy of the old Paternina.
The caves were excavated in two different historical periods: the oldest zones date from the XV and XVI centuries, and are recognized by the architectural elements of Mudejar influence. The rest of the underground wine cellars, whose construction began between the seventeenth and eighteenth centuries, show the trace of the work of effective stonecutters from Galicia. Today, after an extensive rehabilitation, it offers an underground route of two kilometers, a historical heritage shared with the public in the visits to the oldest cellar still in use in Spain.
