A Culinary Vision Rooted in Two Worlds
The restaurant is the brainchild of Patrick d’Aulan, founder of Alta Vista Winery, and Pablo Francisco, its CEO and president. Their shared passion for fine wine and cuisine led to the creation of Assemblage, a space where French sophistication meets Argentine warmth. Together with Executive Chef Mauro Porfiri and Grill Master Fede Pettit, they have crafted a menu that honors both traditions while embracing creativity and local terroir.
Two Dining Experiences, One Philosophy
Assemblage features two distinct dining rooms:
Maison Room: Inspired by a French gastronomic bistro, this space offers refined dishes that highlight French culinary techniques and ingredients.
Garden Room: A tribute to Argentina’s iconic grill culture, this room centers around fire-cooked meats and bold flavors.

The menues are paired with selections from Alta Vista’s most distinguished wine labels. They even have offered experiences of patisserie afternoons paired with Alta Vista Wines. As part of French Week in July, Assemblage presented a unique and original experience dedicated to haute patisserie, created by pastry chef Lucas Carballo, one of the leading figures of the new generation of Argentine pastry chefs, along with Mauro Porfiri, Executive Chef, and Marcelo Villegas, Pastry Chef of Assemblage. With a solid background in French pâtisserie and a career that has positioned him among the leading figures of the new generation of Argentine pastry chefs, Carballo was tasked with leading this unique experience, conceived as a true celebration of French and Argentine savoir-faire. It is worth noting that Carballo represented Argentina at the Coupe du Monde de la Pâtisserie in Lyon, France, placing the country among the world’s Top Ten.
The current menu at Assemblage Restaurante is a refined seven-course tasting experience that celebrates the fusion of Argentine terroir and French culinary artistry. Each dish is meticulously crafted to highlight regional ingredients such as Patagonian scallops, Andean meats, and Cuyo vegetables, all elevated with French techniques and storytelling. Signature courses include trout tartare with grapefruit and blue cheese mousse, grilled filet mignon with maître d’hôtel sauce and potato mille-feuille, and a reimagined Tarte Tatin served with Calvados cream liqueur. Guests can choose from three pairing tiers—Essence, Assemblage, and Heritage—featuring wines like Single Vineyard Olympe Torrontés, Alto 2020, and rare vertical tastings of Alto vintages from 1998 to 2015. Assemblage has earned a coveted spot in the 2025 Michelin Guide, recognized for its “cuisine from the Argentinian soil and French sky. The restaurant’s commitment to excellence is evident in every detail—from the warm, personalized service to the artful presentation of each dish.

Located in Chacras de Coria, the restaurant is surrounded by vineyards, olive trees and lavender bushes, offering a serene and picturesque setting.
