Across Valparaíso – Casablanca Valley, sustainability takes many forms. While every winery and restaurant follows its own path, they all share a common goal: celebrating local identity while protecting the landscapes, resources and communities that make the region a unique destination.
This commitment is reflected in diverse and innovative ways across the valley. At Casas del Bosque, sustainability comes to life through Botánico, the winery’s organic restaurant, where the philosophy of “from our garden to your table” is expressed through seasonal menus featuring vegetables, herbs, fruits, and edible flowers harvested from the estate’s organically managed garden, paired with the winery’s Botanic Series wines. Similarly, at Macerado, located at Casa Viñamar, sustainability is embraced through a cuisine that celebrates local ingredients, seasonal produce, and responsible sourcing. Its menus highlight the richness of the region while fostering close relationships with local producers, demonstrating how gastronomy can preserve culinary heritage, reduce environmental impact, and create authentic wine tourism experiences.
Sustainable tourism is a key pillar of Casablanca’s development, balancing economic growth, environmental protection, and community well-being. In this effort, the Casablanca Municipal Tourism Office and the Casablanca Valley Wine Producers Association (AEVC) work together through the Clean Production Agreement (APL) to promote sustainable practices across the wine tourism sector.
Through technical visits to participating wineries, both organizations have identified initiatives focused on efficient resource use, responsible water and energy management, waste recovery, biodiversity conservation, landscape integration, and stronger community engagement. These actions reflect the region’s commitment to responsible tourism and continuous improvement.
In Valparaíso, restaurants such as Tres Peces, Ápice Cocina de Mar and Restaurant Alegre also contribute to this vision by celebrating seasonal ingredients, working closely with local producers and artisanal fishers, and promoting a cuisine that reflects the identity and richness of the region.
Together, these initiatives demonstrate that sustainability in Valparaíso – Casablanca Valley is expressed through innovation, collaboration and a profound respect for the people and landscapes that define the destination.
